Ingredients
For the wings
- 400 g LUNTER Marinated Tofu Sweet Chilli
- 120 ml vegetable stockÂ
- 3 tbsp soy sauceÂ
- 2 tsp tomato pasteÂ
- 2 tsp mustardÂ
- 1 tsp lemon juiceÂ
- ½ tsp brown sugarÂ
- 2 cloves of garlic, finely choppedÂ
- 1 tsp coriander seeds, crushedÂ
- ½ tsp thymeÂ
- 1 pinch of nutmegÂ
- 1 tsp ginger, finely choppedÂ
- 1 teaspoon paprika powder Â
- ½ onion, finely choppedÂ
- 1 tsp nutritional yeast flakes Â
- 1 tbsp olive oilÂ
For the breading:
- 100 ml plant-based milkÂ
- 50 g flourÂ
- ½ tsp baking powderÂ
- ½ tsp saltÂ
- 1 tsp paprika powderÂ
- 1 tsp nutritional yeast flakes Â
- 100 g panko or breadcrumbsÂ
Instructions
Squeeze tofu well and cut into uneven pieces.Â
Mix all the ingredients well until the tomato puree, mustard and spices have completely dissolved.Â
Marinate the tofu for at least 30 minutes (preferably 2-3 hours).Â
Lightly drain the tofu, fry briefly in a pan or bake – gives a better texture.Â
In a bowl, mix the plant-based milk, flour, baking powder, salt, paprika powder and nutritional yeast.Â
Prepare the breadcrumbs in a separate bowl.Â
First dip each piece of tofu in the liquid mixture, then coat in the breadcrumbs.Â
Place on a baking tray lined with baking paper.Â
Bake at 200°C for approx. 25-30 minutes until golden brown. Alternatively, you can deep-fry them or fry them in a pan with oil.Â
